This post is about a month late. But better late than never, right? It should have been done before Easter…but I got distracted and never made them by Easter, and now I’m going to claim that these amazing treats are not just an Easter treat but a year round treat!
So have I lost you by now? You are dying to know what treats I’m talking about! Well I’m calling these non-Cadbury non-Cream non-Egg chocolates or more appropriately the NaughtyVegan’s chocolate delight! And I’m being defiant and saying you should eat this year round…as us Chocoholics need our fix man
Ingredients:
1/2 cup light corn syrup
1/4 cup + 2tsp Earth Blanace or vegan butter
1 teaspoon vanilla
1/4 teaspoon salt
3 cups powdered sugar, sifted
12oz vegan chocolate chips
Directions:
In a big bowl mix the corn syrup, vanilla and a 1/4 cup of Earth Balance until creamy. Add 2 and 3/4 of the powdered sugar and salt and mix until it comes to the right consistently. If it feels a bit runny, add up to another 1/4 cup of powdered sugar to get the consistency right. You don’t want to make the mistake I did, which is add too much powdered sugar and lose the creamy consistency.
Melt the chocolate chips and 2 tsp of Earth Balance in a double broiler or if you know how do it in your microwave. I’m always worried I’d burn the chocolate so I’ve never melted chocolate in the microwave.
This is where it gets a bit tricky, and with practice, you’ll be much better at it and a lot faster too. You cover the inside of a small paper cup with about a tsp of the melted chocolate and swirl it around, or with the help of a small knife push it against the walls of the cup. Let it set, or put them in the fridge or freezer to set quicker. Once set, fill them with a tea spoon of the creamy middle and top them with more melted chocolate and let them set. Now enjoy these chocolate delights, until your tooth hurts..and make sure you share!!
