Yes that’s low calorie cinnamon bun! Not exactly diet food, but it does have almost half the calories of a regular cinnamon bun recipe and even less than that of a store bought cinnamon bun! It’s around 270 calories, and very little of that is from sugar. Best part is it doesn’t taste like it is low cal. It still tastes like a treat, but unlike a Cinnabon it won’t hurt your teeth!

Vegan Cinnamon Buns

All of them before they were devoured

This is an easy recipe if you’ve got a bread machine. If not, well I hope you are good at kneading dough or have a lot of pent up frustrations you need to get out of your system. The recipe is described in full details here on Srecipe, but I’ll give you a quick run down of it, starting with the ingredients.

Dough:
  • 1/2 cup soy milk
  • 3 tbsp Earth Balance or Coconut oil (melted)
  • 1/2 tsp vanilla extract
  • 1 flax egg (1 tbsp ground flax + 3 tbsp warm water)
  • 2 1/4 cups Unbleached all purpose flour
  • 1 1/4 tsp yeast
Last Bite

What was left of all the Cinnamon Buns

Filling:
  • 1 flax egg (1 tbsp ground flax + 3 tbsp warm water)
  • 2 tbsp Earth Balance or Coconut oil (melted)
  • 1/4 brown sugar
  • 1 tbsp cinnamon
Icing:
  • 1/4 cup tofutti
  • 1  tbsp Earth Balance or Coconut oil
  • 1/2 cup icing sugar
  • 1 tsp vanilla extract

If you have a bread machine, the dough is easy as dumping all the ingredients in your bread machine and selecting the dough cycle. Once the dough is done rising, Mr. Mojo risin’, flatten it out onto a floured surface into a rectangle that’s 1/4 inch thick and spread the filling ingredients all over it. Then roll it, roll it, roll it like a newspaper, and cut it into 8 equal sushi looking cinnamon rolls. Put them all facing all up into a bread pan lined with parchment paper and bake them at 400°F (200°C) for 10-15 minutes until the tops are golden brown. Whip all the icing ingredients and whip it real good! Next slather it all over the buns. I find half is more than enough, but you can use more if you like. And there you have it…yummy yummy cinnamon buns that won’t go straight to your thighs!!
